How to make khoya makhana (mava mutter makhana)?

Ingredients

  • Grated 100 grams of khoya
  • 1 cup chopped onion
  • 2 cups of lotus seeds (Makhanas)
  • 1 cup of peas
  • 1 cup of fresh tomato puree
  • 1.5 teaspoons chopped ginger
  • Chopped 1-2 green peppers
  • Chopped 1.5 teaspoons of garlic
  • ¼ teaspoon of turmeric powder (Haldi)
  • 1 teaspoon coriander powder (Dhania)
  • ½ teaspoon chili powder (optional)
  • 1 teaspoon Garam Masala
  • 3-4 green cardamom
  • 1 bay leaf
  • 1 “cinnamon stick
  • 3-4 clove
  • 1 teaspoon of Kasuri Methi
  • 2-3 tablespoons of ghee or oil
  • 2 tablespoons of ghee for frying
  • Salt to taste
  • finely chopped coriander

Method

1. Heat a nonstick skillet, put the Makhanas and dry them on medium heat for 3 to 4 minutes while throwing them constantly.

khoya-makhana.jpg2. Heat the ghee in a deep nonstick skillet to fry, add the roasted Makhanas and fry until lightly browned on all sides. Drain on paper towels. Keep aside.

4. Cool and mix in a blender until smooth. Keep aside.

5. Heat the ghee in a deep nonstick skillet, add the onions and fry for 2 minutes over medium heat.

Making Indian curry is easy enough if you know how to prepare yourself. To make it easier, I have listed the following meals that you can do. If you follow this, you can always cook curry in a hurry.

  • You can roast the Makhana in the microwave and keep it in a container in advance and use it to prepare dishes such as kheer and the roasted snacks, you can buy roasted makhana online.
  • The mushrooms can be cleaned and cut in advance and kept in the refrigerator in a container with a small pore so that they can come into contact with the air.

Instructions:

  • Fry the fox nuts in a saucepan/microwave dry and keep it aside.
  • Heat the oil in a pan and sprinkle with ginger.
  • Sauté for a minute and add the bay leaf and cooked onion paste. Bake 4-5 minutes over medium heat, stirring.
  • Now add the turmeric powder, salt, red pepper powder, black pepper powder and cook for a minute.
  • Add tomatoes and tomato paste and 3-4 tablespoons water as needed and cook on medium heat for 7-8 minutes.
  • Stir and cook until Masala begins to leave the sides of the pan.
  • Now add the chopped mushrooms and spinach and cook for 3-4 minutes.
  • Add 1 cup of water and cover. Cook for 7-8 minutes and add the garam masala powder and the roasted makhani / fox nut and serve hot.

  • In the same pan, add caraway seeds, methi, prepared onion & tomato paste and saute well.

  • Then add cashew nut powder, boiled potatoes along with water (water used in boiling potatoes), salt and cook well by stirring occasionally.
  • Also, add roasted makhana and cook it for 1-2 minutes.
Delicious Aloo makhana Sabzi is now ready to eat.

Homemade Roasted Makhana Kheer Recipe – POPMAK Makhana

Makhanas are nothing but blown lotus seeds, as well as popcorn. Today is the fifth day of Navratri and I decided to treat myself today with Makhana Kheer. In general, my mother would grill ghee in a few teaspoons and add salt and pepper, which is a good meal. I think makhanas are also added to a variety of curries, but I have never tried it. Easy and quick to prepare – that’s how I went –

Ingredients:

  • Phool Makhanas / roasted makhana – 1 cup
  • milk – 750 ml
  • sugar to taste
  • Kesar – some sprigs (optional)
  • dried fruits and raisins (vertically cut almonds, pistachios, walnuts cashew) Ghee – 3 teaspoons (optional)
  • cardamom powder – 1/2 teaspoon (optional)

Instructions

  1. Heat ghee in a pan, roast Phool makhana on low flame till toasted. Take it in a bowl and cool it down. Crush it roughly with your hands and set aside.
  2. Take milk and sugar in a pan and heat till milk is reduced by half. Add in Phool makhana/ roasted makhana and mix well. Cook till makhana gets soft.
  3. Now add in condensed milk, cardamom, and saffron.
  4. Mix well.
  5. Serve warm or cold.

The first time I saw a pack of Phool Makhana in a supermarket, it fells me interesting. They are very similar to popcorn but are actually lotus seeds.   • Frying these fried lotus seeds in the pan will help bring out their sweet aromas. You can fry the seeds in a little ghee, sprinkle with chili powder and salt on top for a good evening snack.

  • 1 bunch spinach
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 cup Phool Makhana
  • 1 tsp Cumin
  • 1 tsp Garam Masala
  • 0.5 tsp chili powder
  • 1 Cinnamon stick
  • 0.5 tsp Turmeric
  • 0.25 cup Milk
  • 1 Tblspn Ghee
  • Salt to taste

Method:

  • Chop the spinach and rinse gently in a bowl of water. Put the turmeric in a saucepan. The water on the spinach is enough to cook it. Cover and cook until the spinach is wilted and almost cooked. Mix with the hand blender until it is half smooth.
  • Grill the roasted makhana in a pan in a dish with a little ghee until light brown (you can mix in a dry pan if you want). Remove and set aside.
  • In the same pan with the remaining ghee, grill the cumin until brown. Add the onions and cook until they are transparent.
  • Add the tomatoes and cook until they lose most of their liquid. Then add the spices – turmeric, garam masala, cinnamon stick, chili powder and salt to taste – and add the water. Mix and simmer for 1 to 2 minutes.
  • Add spinach and milk and simmer for another 3 minutes. Add the roasted Makhana Hotel with spinach sauce. Bring to the boil, simmer for a moment, Ready to eat snack.

  • If you want to skip ghee or oil, you can also dry it. However, spices do not mix well and can give a raw taste. The use of ghee or oil makes Makhana tastier.

2. Caramelized Makhana

Ingredients

  • Makhana – 2 cups
  • Jaggery Gold Cane Sugar
  • Ghee or coconut oil

Method

  • Makhana fries in ghee or coconut oil over low heat until crisp.
  • In another saucepan, stir with a little water over low heat. It will melt into a golden brown liquid. Check for a sticky consistency.
  • Stir constantly for the melted jaggery on the roasted Makhana.
  • In a few minutes Makhanas would be covered with jaggery. Cool and store in an airtight container.
  • This is a good snack that you can nibble at any time. Do you have to saturate your sweet tooth with tea. The crispy fox nuts and the natural sweetness of Jaggery make you want more.

3. Healthy Makhana Chaat

Flavoured makhana is a traditionally known roasted snacks brands. Give us a turn and create a Makhana Chaat inimitable, healthy and without oil. 

Ingredients

  • Makhana
  • Potatoes
  • Quark or yogurt – 1 cup
  • Pomegranate seeds – 1/2 cup
  • Black pepper powder – 1/2 teaspoon
  • Raisins – handle
  • Roasted cumin
  • Coriander leaves – handle – chopped
  • Lemon juice (optional)
  • Salt to taste

Method

  • Soak Makhana in water for 30 minutes. Squeeze the water and put in a bowl.
  • Add the rest of all ingredients to the bowl of spices and salt.
  • Throw well. Add raisins at the end.

This healthy chaat is made in less than 15 minutes. To make it more consistent, you can add grated cucumber to the mixture. You can create a variation by replacing the raisins with Sev. 4. Makhana Matar Curry

It is a unique dish, unlike the usual curries. It is light and satisfying and has a fantastic taste! 

Ingredients

  • Makhana
  • Peas – 1 cup
  • Onion 2 large, chopped
  • Tomato puree – 1 cup
  • Red pepper powder (optional) – 1 tablespoon
  • Coriander powder – 1 tablespoon
  • Garam Masala – 1 dessert
  • Caraway-2 tablespoons
  • Turmeric-1 tablespoon
  • Cashew nut 5-6
  • Garlic – 5-6 cloves
  • Ginger 1 inch piece

Method

  • Put the Makhana in the heated skillet and roast over low heat until crisp. Transfer to a plate, keep aside.
  • Heat oil and sauté half of chopped onions and garlic until lightly browned. Turn off the flame and add the cashews that heat in the heat of the tub. Allow the mixture to cool before adding a paste to the mixer with a little water.
  • Heat more oil in a saucepan. Add the sesame seeds until they crack. Add half of the chopped onions to the pan and fry. Add the onion paste to the mold. Always good for 3-4 minutes.
  • Add the tomato puree, turmeric, coriander powder and fresh powder. Mix well. Cover the pan and cook until the oil dissolves.
  • Add half a cup of water, peas and salt. Cover the pan with a lid and simmer for 4-5 minutes.
  • Drop roasted makhana, simmer for a minute and extinguish the flame.

The lotus seeds soak the water and thicken the sauce as the mixture cools. Garnish with coriander leaves or dry red peppers. Enjoy chapati or rice.

5. Makhana Tikki

Surprised? Well, lotus seeds are full of surprises and give us immense possibilities for experimentation. Here’s a super easy recipe for Tikki’s potato and fox seed.

Ingredients

  • 4 medium potatoes – cooked and mashed
  • Fox nuts – 1 cup
  • Green peppers – 2, finely chopped
  • Grilled peanuts-2 tablespoons, roughly crushed
  • Coriander leaves – handle, finely chopped
  • Fennel seed powder – 1 teaspoon
  • Garam Masala Powder – 1 teaspoon
  • Chaat Masala – 1 teaspoon
  • Cooking oil – 4-5 tablespoons
  • Salt to taste

Method

  • Start smoking ghee with fox nuts until they are crisp. Coat the seeds roughly.
  • Put the coarsely ground Makhana, the mashed potatoes and the rest of the ingredients in a bowl. Mix well. Change the salt and spices to your taste.
  • Form the mixture into round or oval patties. Sauté lightly in pan until both sides are golden brown.
  • Serve with ketchup or pudina chutney.
